Maple-Apple Cake

Ingredients

  • 6 Honeycrisp, Golden Delicious or Gala apples, peeled and cut into 8 pieces
  • 175 ml (¾ cup) maple syrup
  • 60 ml (¼ cup) butter, at room temperature
  • 80 ml (⅓ cup) sugar
  • 1 egg
  • 250 ml (1 cup) unbleached flour
  • 1 ml (¼ tsp.) ground cinnamon
  • 10 ml (2 tsp.) baking powder
  • A pinch of salt
  • 125 ml (½ cup) iÖGO Greek 0% Vanilla yogurt, at room temperature
It's even better hot, with just a spoonful of iÖGO Creamy Vanilla.

Preparation

Preheat oven to 180ºC (350ºF). In a cast-iron or ovenproof pan of 23 cm (9 in.) in diameter, arrange the apples and pour in the maple syrup. Bring to a boil, lower to medium heat and cook the apples for 10 minutes. Let cool.

Meanwhile, in a bowl, beat the butter and sugar using an electric mixer until smooth. Add the egg and beat until the mixture is homogenous.

In another bowl, mix the flour, cinnamon, baking powder and salt. Using a wooden spoon, create a paste by folding the dry ingredients into the wet ingredients, alternating between the dry ingredients and yogurt, and ending with the dry ingredients. Pour the paste onto the apples.

Cook in the oven for 35 to 40 minutes or until a toothpick inserted in the centre of the cake comes out clean. Serve hot or warm.
