Panna Cotta with Berries

  • Serves : 4 portions

Ingredients

Fruit coulis

  • 250 ml (1 cup) mixed berries (thawed or fresh)
  • 15 ml (1 tbsp.) maple syrup
  • 20 ml (4 tsp.) ground flaxseed

Panna cotta

  • 30 ml (2 tbsp.) cold water
  • 7.5 ml (1 ½ tbsp.) gelatine
  • 80 ml (⅓ cup) warm 1% M.F. milk
  • 375 ml (1 ½ cup) iÖGO Greek 0% Plain yogurt

Good to know…

This quick dessert can be made with a wide variety of fresh, seasonal fruits (mango, passion fruit, raspberries, etc.) or frozen fruit. For a sweeter taste, use iÖGO Probio or iÖGO 0% Vanilla yogurt.

Did you know that "panna cotta" means "cooked cream" in Italian? Personally, we prefer yogurt!

Preparation

In a small saucepan, combine the fruit and the maple syrup. Bring to a boil, lower the heat and let simmer over low heat for approximately 5 minutes.

Grind the fruit in a blender and add the ground flaxseed.

Transfer the fruit coulis into 4 ramekins or glasses and let cool completely.

Soak the gelatine in cold water until soft. Let set for a few seconds.

Liquefy the gelatine by heating the mixture in a microwave oven for a few seconds.

Add the warm milk and mix thoroughly. Incorporate the yogurt and mix until smooth and homogenous.

Carefully spoon the yogurt into the ramekins, over the fruit. Cover with plastic wrap and refrigerate until the mixture sets, for at least 2 hours.
