Shrimp Acras

Ingredients

Shrimp Acras

  • 400 g (14 oz) shrimp, peeled and chopped
  • 2 cloves garlic, finely chopped
  • 2 green onions, chopped
  • 60 ml (¼ cup) fresh coriander, chopped
  • Sriracha, Tabasco or cayenne pepper to taste
  • 175 ml (¾ cup) unbleached flour
  • 125 ml (½ cup) corn flour
  • 7.5 ml (1 ½ tsp.) baking powder
  • 3.5 ml (¾ tsp.) salt
  • 2 eggs
  • 175 ml (¾ cup) iÖGO Greek 0% Plain yogurt
  • Peanut oil, for deep fryer

Yogurt sauce

  • 60 ml (¼ cup) iÖGO Greek 0% Plain yogurt
  • 60 ml (¼ cup) mayonnaise
  • Sriracha, Tabasco or cayenne pepper to taste
  • Salt and ground pepper

Preparation

Shrimp Acras

In a bowl, combine the shrimp, garlic, green onion, coriander, Sriracha and seasoning. Mix in the flours, baking powder and salt. Add shrimp. Mix in yogurt and eggs.

Heat oil to 190ºC (375ºF). Using a spoon, drop approximately 15 ml (1 tbsp.) of the mixture for each acra. Cook only eight at a time to maintain the temperature of the oil. Fry 3 to 4 minutes or until the acras are golden-brown, turning halfway through. Put on an absorbent paper towel.

Serve hot with yogurt sauce.

Yogurt sauce

In a bowl, combine all ingredients and season. Keep in refrigerator until ready to serve.
