Green Asparagus and Sesame Dip

Ingredients

  • 454 ml (1 pound) fresh asparagus
  • 250 ml (1 cup) iÖGO Probio Lactose-free Plain yogurt
  • 10 ml (2 tsp.) Dijon mustard
  • 30 ml (2 tbsp.) olive oil
  • 10 ml (2 tsp.) sesame oil
  • 80 ml (⅓ cup) orange juice
  • 5 ml (1 tsp.) orange zest, finely grated
  • 5 ml (1 tsp.) paprika
  • 15 ml (1 tbsp.) chopped chives
  • 1 pinch Cayenne pepper
  • Salt and ground pepper

Good to know…

Sesame oil lends a surprising flavour to this sauce, which enhances the taste of the asparagus.

This sauce can also be used as an accompaniment to shrimp.

Never underestimate asparagus.

Preparation

Rinse the asparagus and break off the stems.

Cook in a large pot with salted water for 5 to 10 minutes, depending on the size of the asparagus. Using the tip of a paring knife, ensure they remain firm. When ready, rinse them under cold water and drain.

Combine the remaining ingredients in a bowl and whisk until smooth. Arrange the asparagus on a serving plate and serve with the dipping sauce.
