Ingredients
- 250 ml (1 cup) quick-cooking oatmeal flakes
- 5 ml (1 tsp.) baking powder
- 1 ml (¼ tsp.) ground ginger
- 1 ml (¼ tsp.) nutmeg, finely grated
- 125 ml (½ cup) milk ( 2%)
- 125 ml (½ cup) iÖGO Greek 0% Vanilla yogurt
- Zest of a quarter-orange, finely grated
- 60 ml (¼ cup) chopped dried cranberries, golden raisins or sultana raisins
- 2 eggs
- Butter for cooking
- Choice of toppings: yogurt, maple syrup, roasted sliced almonds, finely sliced apple or other fruit.
Syrup is just the best!
Preparation
In a bowl, combine the dry ingredients. Add the milk, yogurt, orange zest and cranberries. Let stand for 15 minutes.
Add eggs and mix well. In a non-stick pan, heat some butter on medium heat. Pour 80 ml (⅓ cup) of the mixture for each pancake and cook for 3 to 4 minutes. Turn pancakes over and finish cooking for 2 minutes or until they are golden brown.
If desired, serve with yogurt, maple syrup and apples.
