Matcha Green Tea Cake

Ingredients

  • 175 ml (¾ cup) butter, at room temperature
  • 175 ml (¾ cup) sugar
  • 3 eggs
  • 250 ml (1 cup) iÖGO Creamy Vanilla yogurt
  • 60 ml (¼ cup) milk
  • 375 ml (1 ½ cup) unbleached flour
  • 125 ml (½ cup) ground almonds
  • 15 ml (1 tbsp.) Matcha-powder green tea
  • 5 ml (1 tsp.) baking powder
  • 1 ml (¼ tsp.) salt
It's time for tea (and cake!)

Preparation

Preheat the oven to 180°C (350°F). In a large bowl, beat butter and sugar using an electric beater until smooth. Add the eggs, one at a time, and beat as each egg is added. Mix in the yogurt and milk.

In another bowl, mix the flour, ground almonds, tea, baking powder and salt. Gently fold the dry ingredients into the wet ingredients. Do not overmix.

Grease three moulds (15 x 8 cm or 5.75 x 3 in.) with butter and flour, and pour in the mixture. Cook in the middle of the oven for 55 to 60 minutes. Let cool for 5 minutes, remove from the mould and finish cooling on a rack.

If using a 5 x 8 in. mould, cook for 60 to 65 minutes or until a tooth pick inserted in the centre of the cake comes out clean.
