Swiss Chard Soup

Ingredients
- 1 bunch Swiss chard
- 30 ml (2 tbsp.) butter
- 1 onion, chopped
- 2.5 ml (½ tsp.) ground turmeric
- 2 garlic cloves, finely sliced
- 750 ml (3 cups) milk (2%)
- 125 ml (½ cup) iÖGO Greek 0% Plain yogurt, at room temperature
- Zest of a quarter-lemon, finely grated
- Espelette pepper (optional)
- Salt and ground pepper
Preparation
Wash Swiss chard and coarsely chop.
In a pot, melt the butter over medium heat, and gently cook Swiss chard, onion and turmeric for 4 to 5 minutes. Add the garlic, milk and salt, and bring to a boil. Cook covered for 10 to 12 minutes, or until the Swiss chard stems are tender.
Puree with an electric mixer. If necessary, put through a sieve. Add 80 ml (⅓ cup) of the yogurt and keep cooking on low heat. Adjust seasoning.
In a small bowl, mix the rest of the yogurt, lemon zest and seasoning.
Garnish each bowl with this yogurt mixture and sprinkle with Espelette pepper if desired when ready to serve.
